Ingredients (view qty in metric system instead)
1 pound ground Italian sausage 1 pound ground beef 1 large onion, peeled and chopped 4 cloves garlic, peeled and chopped 1 tsp. crumbled dried oregano 1/2 tsp. dried thyme 28 ounce can Italian style chopped tomatoes, drained 2 tbsp. tomato paste 1/4 tsp. cayenne pepper 15 ounce can red kidney beans, drained and rinsed 1/4 tsp. salt 1/4 tsp. pepper 1 pound cooked mostaccioli pasta 1/2 cup grated Parmesan 1/4 cup chopped fresh Italian parsley leaves 12 ounces grated Provolone cheese
Directions
Preheat oven to 400 degrees. Lightly coat the inside of a 9x13 inch baking dish with cooking spray. Combine ground sausage, ground beef, onion, garlic, oregano and thyme in a large saucepan. Cook over medium high heat about 5 minutes until beef and sausage are browned, breaking up clumps with a fork. Add chopped tomatoes, tomato paste and cayenne. Simmer 5 minutes. Add kidney beans, salt, pepper, Parmesan and parsley and toss well. Transfer casserole mixture to the prepared dish. Sprinkle with Provolone. Bake about 30 minutes until cheese is melted and casserole is heated through.
Serves 8.
