Ingredients (view qty in metric system instead)
1 cup uncooked orzo pasta 1 cup grated Monterey Jack cheese 1/2 cup diced red bell pepper 1/3 cup canned diced green chilies, drained 1 cup sour cream 1/2 cup grated Parmesan cheese 2 tbsp. cold butter, diced
Directions
Preheat oven to 450 degrees. Lightly butter a 6 cup casserole dish. Boil orzo in lightly salted water until just tender. Drain orzo well. Combine cooked orzo pasta, Monterey Jack cheese, bell peppers and green chilies in the prepared dish. Spread sour cream over pasta and sprinkle with Parmesan. Dot the top with butter and bake about 15 minutes until casserole is puffed and golden. Serve immediately.
Serves 6.
