Ingredients (view qty in metric system instead)
8 slices egg bread, crusts trimmed 2 pounds link sausage, cooked and drained 1 tbsp. vegetable oil 1 large onion, peeled and sliced 8 ounces sliced mushrooms 5 large eggs, beaten to blend 1 cup milk 1 can cream of mushroom soup 1 cup shredded sharp cheddar cheese
Directions
Butter a 9x13 inch glass baking dish. Line the bottom of the dish with bread slices. Lay sausages over bread. Heat oil in a medium skillet. Add onion and cook, stirring frequently, about 4 minutes until crisp-tender. Add mushrooms and cook about 5 minutes until tender. Spoon onion mixture over sausages. Whisk together eggs, milk and soup in a medium bowl. Pour over casserole. Sprinkle cheddar over top. Cover and refrigerate overnight. Preheat oven to 350 degrees. Bake casserole about 40 minutes until heated through.
Serves 6 to 8.
