Ingredients (view qty in metric system instead)
9 ounces bittersweet chocolate 3 tbsp. butter 1 tbsp. instant espresso powder 1/2 cup brown sugar 2 large eggs 1 tsp. vanilla extract 1/3 cup all purpose flour 1/4 tsp. baking powder 1 1/2 cups chopped macadamia nuts 4 ounces chopped semisweet chocolate
Directions
Preheat oven to 350 degrees. Butter a large sheet pan. Melt together bittersweet chocolate and butter in the top of a double boiler over simmering water. Stir until smooth. Stir in espresso powder. Remove chocolate mixture from over water and cool to room temperature. Sift together flour and baking powder in a small bowl. Blend into espresso mixture. Stir in macadamias and semisweet chocolate. Drop batter in 12 large mounds onto prepared pan. Bake about 10 to 12 minutes until tops are slightly cracked. Cool 10 minutes on pan. Transfer cookies to a rack and cool completely.
Makes 12 cookies.
