Ingredients (view qty in metric system instead)
1 1/3 cups milk 3/4 cup sugar 1/2 cup chopped macadamia nuts pinch salt 1 tsp. vanilla extract 1 large egg 5 tsp. cornstarch 2 large egg whites 1 baked 9 inch pie shell 1 cup heavy or whipping cream, whipped to stiff peaks
Directions
Combine 1 cup milk, 1/4 cup sugar, 1/4 cup macadamias, salt and vanilla in a medium saucepan and scald. Stir together remaining 1/3 cup milk, egg and cornstarch in a medium bowl. Stir in hot milk mixture and return to pan. Cook, stirring, until mixture thickens, about 5 minutes. Cool 1 hour. Beat egg whites to soft peaks in a medium bowl. Gradually add remaining 1/2 cup sugar and beat to stiff peaks. Fold into cooled milk mixture. Pour into baked pie shell and refrigerate 1 hour. Top with whipped cream and remaining 1/4 cup macadamias before serving.
Serves 8 to 10.
