Lowfat Orange-Crumbed Baked Chicken Recipe Rating: N/A

Ingredients   (view qty in metric system instead)
2 tbsp. orange juice
2 tbsp. dijon mustard
1/4 tsp. salt
3/4 cup whole wheat cracker crumbs
1 tbsp. grated orange peel, orange part only
1 shallot, minced
1/4 tsp. pepper
4 boneless skinless chicken thighs, about 3 ounces each



Directions
Preheat oven to 350 degrees. Spray a sheet pan with nonstick spray. Combine orange juice, mustard and salt in a small bowl. Combine cracker crumbs, orange peel, shallot and pepper on a sheet of wax paper. Brush chicken with mustard mixture. Dredge in crumbs to coat, pressing to adhere. Place chicken on the prepared pan and bake 15 minutes. Turn chicken over and bake an additional 15 to 20 minutes until cooked through.
