Ingredients (view qty in metric system instead)
4 medium potatoes, baked 1 cup lowfat cottage cheese, drained 1/2 cup lowfat milk 1 tbsp. minced onion 1/4 tsp. pepper 1/8 tsp. paprika 1/4 tsp. dried parsley flakes
Directions
Preheat oven to 400 degrees. Cut baked potatoes in half lengthwise. Scoop out the the meat of the potato, leaving skins intact. Transfer the scooped out potato to a medium bowl. Whisk in cottage cheese, milk and onion until potatoes are fluffy. Spoon mixture back into potato skins. Sprinkle potatoes with paprika, pepper and parsley flakes. Bake potatoes about 10 minutes until golden.
Makes 8 twice baked potatoes.
