Ingredients (view qty in metric system instead)
1 1/2 cups finely chopped onion 1 tbsp. minced garlic 1 tsp. olive oil 1 cup finely chopped carrot 1/2 pound mushrooms, finely chopped 1 tsp. salt 1/2 tsp. pepper 1 1/2 tsp. worcestershire sauce 1/3 cup minced fesh parsley 1/4 cup +1 tbsp. ketchup 1 cup fresh breadcrumbs 1/3 cup 1% milk 1 large egg, beaten to blend 1 large egg white 1 1/4 pounds ground turkey
Directions
Preheat oven to 400 degrees. Cook onion and garlic with oil until tender, about 2 minutes. Add carrot and cook until softened, about 3 minutes. Add mushrooms, salt and pepper and cook until liquid evaporates. Stir in worcestershire, parsley and 3 tbsp. ketchup. Transfer to a bowl and cool. Stir together breadcrumbs and milk and let stand 5 minutes. Stir in egg and egg white and stir into vegetable mixture. Add turkey and mix well by hand-mixture will be very moist. Form into a loaf and place in a lightly greased 13x9x2 inch baking pan. Brush top with 1 tbsp. ketchup and bake 50 to 60 minutes, until internal temperature reaches 165 degrees. Let stand 5 minutes before slicing.
Serves 6.
