Ingredients (view qty in metric system instead)
1 to 2 pound frozen duckling 1 to 2 tbsp. soy sauce 1/4 tsp. salt 1/4 tsp. pepper 1/4 tsp. dried crumbled rosemary or your favorite herb 1/2 recipe prepared stuffing if desired
Directions
Thaw duckling in the refrigerator for 2 days or under cold running water for about 5 hours. Remove giblets and neck. Rinse and pat dry. Preheat oven to 375 degrees. Scratch breast skin of duckling lengthwise with a sharp fork. Rub skin with soy sauce. Season duckling with salt, pepper and rosemary. Stuff duckling if desired. Place breast-side up on a rack in a 2 inch deep roasting pan. Roast 2 hours. Turn breast-side down and continue roasting for 30 minutes. Let stand 5 to 10 minutes before slicing.
Serves 2 to 4.
