Ingredients (view qty in metric system instead)
1 1/2 pounds lean ground beef 5 ounce jar strained carrot baby food 1/2 cup tomato juice 1/4 cup chopped fresh parsley leaves 1/4 cup chopped onion 1 1/2 tsp. salt 1/2 tsp. Italian seasoning
Directions
Preheat oven to 375 degrees. Combine ground beef, strained carrots, tomato juice, parsley, onion, salt and Italian seasoning in a large bowl. Stir mixture with a fork just until mixed(over mixing will toughen meatloaf). Form beef mixture into thick, 8 inch round patty. Place patty on a rack set in a shallow baking pan. Bake meatloaf about 35 minutes until cooked through and top is browned. Let meatloaf stand about 5 minutes before slicing into 6 pieces and serving.
Serves 6.
