Ingredients (view qty in metric system instead)
4 low fat whole wheat tortillas 1 cup salsa 1 1/2 cups shredded. cooked chicken breast 3/4 cup prepared black beans, rinsed and drained 1/2 cup frozen corn, thawed 1 1/2 cups reduced fat monterey jack or cheddar cheese
Directions
Preheat oven to 450 degrees. Place tortillas on a sheet pan and spread 1/4 cup salsa on each one. Sprinkle chicken, black beans and corn over salsa. Sprinkle cheese over. Bake 8 to 10 minutes or until cheese is melted. Serve with low fat sour cream and diced tomato.
Serves 4.
