Ingredients (view qty in metric system instead)
1 pound lean ground beef 3/4 cup chopped onion 1 1/2 tsp. chili powder 1 tsp. salt 1 tsp. pepper 1/2 tsp. ground cumin 1/4 cup canned diced green chilies, drained 1 1/8 cup all purpose flour 1 1/2 tsp. baking powder 2 tbsp. margarine 1 1/2 cups skim milk 3 large eggs 3 ounces shredded Monterey Jack cheese 1 1/2 cups shredded lettuce 1 1/2 cups diced tomatoes salsa
Directions
Preheat oven to 350 degrees. Coat the inside of a 10x10 inch baking dish with cooking spray. Combine ground beef and onions in a large skillet. Cook over medium high heat, breaking up clumps, until beef is browned. Drain beef and spread evenly in the prepared dish. Sprinkle the diced green chilies over the beef. Sift together flour and baking powder into a large bowl. Cut in margarine until coarse crumbs form. Add milk and eggs and whisk until batter is smooth. Pour the batter over the beef. Bake about 35 to 40 minutes until top is puffed and lightly browned. Sprinkle with the Monterey Jack and bake an additional 5 minutes. Let pie stand 5 minutes before cutting into squares. Garnish each slice with some of the lettuce and tomatoes. Serve immediately with salsa.
Serves 6 to 8.
