Ingredients (view qty in metric system instead)
16 ounce container low fat cottage cheese 3 large eggs 6 tbsp. all purpose flour 2 tbsp. sugar 2 tbsp. butter, melted 1/8 tsp. salt 1 tbsp. vegetable oil
Directions
Place cottage cheese in a fine strainer and let drain 2 hours. Discard liquid. Stir together drained cottage cheese, eggs, flour, sugar, melted butter and salt in a large bowl. Heat oil in a large skillet over medium heat. Pour off oil. Ladle 1/4 cup batter per pancake into the skillet. Cook about 1 1/2 to 2 minutes per side until pancakes are set and golden brown. Serve warm.
Makes about 16 pancakes.
