Ingredients (view qty in metric system instead)
2 tbsp. olive oil 1/4 cup chopped onion 1 tsp. minced garlic 1 medium carrot, peeled and matchsticked 1 cup sliced mushrooms 1 pound boneless, skinless chicken breast, cubed 1 1/2 cups chopped green beans 2 cups fast cooking rice 1 1/2 cups low salt, fat free chicken broth 1/2 cup frozen peas 1/4 cup grated parmesan cheese
Directions
Cook onion, garlic, carrot and mushrooms with oil for 2 minutes. Add chicken and cook until white, approx. 4 minutes. Add beans and rice and cook 1 minute. Add 1 cup broth and cook until liquid is absorbed. Stir in peas. Add 1/2 cup broth and cook until mostly absorbed. Stir in cheese and serve.
Serves 4.
