Ingredients (view qty in metric system instead) 3/4 cup water 1/4 cup dry white wine 1/4 tsp. dry basil 6 black peppercorns 1 bay leaf 1 clove garlic, halved 1/2 pound boneless skinless chicken breast 2 tbsp. nonfat mayonnaise 2 tbsp. plain nonfat yogurt 1 tbsp. red wine vinegar 1 tbsp. olive oil 1/2 tsp. spicy brown mustard 1/8 tsp. salt 1/8 tsp. pepper 1 cup cooked rotini pasta 1 cup cherry tomato halves 1/4 cup thinly sliced green onion Mixed lettuce Directions Bring water, wine, basil, peppercorns, bay leaf and garlic to a boil in a saucepan. Add chicken, cover and simmer 15 minutes or until cooked through. Reserve chicken. Strain liquid, reserving 2 tbsps. Chop chicken. Stir together reserved cooking liquid, mayonnaise, yogurt, vinegar, oil, mustard, salt and pepper. Toss together chicken, pasta, tomatoes and green onions in a bowl.
