Ingredients (view qty in metric system instead)
1 pound boneless, skinless chicken breast cut into 1 1/2 inch cubes 1/4 cup all purpose flour 1/4 tsp. paprika 1/4 tsp. pepper 1 egg white 1/2 cup low fat buttermilk 2 cups crushed cornflakes
Directions
Preheat oven to 450 degrees. Coat baking sheet with nonstick spray. Mix together flour, paprika and pepper in a bowl. In a separate bowl stir together egg white and buttermilk. Place cornflakes in a third bowl. Coat chicken with flour. Working 1 piece at a time, dip chicken into egg mixture then coat with breadcrumbs. Bake 10 minutes or until golden brown and cooked through, turning several times.
Serves 4.
