Ingredients (view qty in metric system instead)
4 corn tortillas 2 cups shredded, cooked boneless, skinless chicken breast 1 cup prepared black beans, rinsed and drained 1/2 cup fresh or frozen corn, thawed 1 cup salsa 1 cup plain low fat yogurt 1/2 cup reduced fat sour cream 1 cup reduced fat shredded monterey jack or cheddar
Directions
Preheat oven to 350 degrees. Coat small baking pan with nonstick spray. Warm tortillas in oven or microwave. Stir together chicken, beans and corn. Stir together salsa, yogurt and sour cream. Mix 1/2 of yogurt mixture into chicken. Divide chicken mixture between tortillas. Roll and put in baking pan seam side down. Spoon remaining salsa mixture over tortillas. Sprinkle with cheese and bake 30 minutes.
Serves 4.
