Ingredients (view qty in metric system instead)
3 cups soybean oil 2 pounds fresh cod fillets 1 1/3 cups self-rising flour 1 cup water 1 large egg 2 tsp. sugar 2 tsp. salt
Directions
Heat the oil in a deep pan to 400 degrees. Curt the fish into 7x2 inch wedges. Blend together the flour, water, egg, sugar and salt in a medium bowl. Dip each fish fillet into batter, coating generously. Drop fish into oil and fry about 5 minutes until deep golden brown. Drain fish on paper towels.
Makes 4 to 6 fish fillets.
