Ingredients (view qty in metric system instead)
4 large eggs, separated 1 cup low-fat cottage cheese 1/4 cup all purpose flour 2 tbsp. skim milk 1/4 tsp. salt
Directions
Beat whites in a medium bowl until stiff peaks form. Combine yolks, cottage cheese, flour, milk and salt in a blender and process until smooth. Fold into egg whites. Butter a large skillet and place over medium heat. Using 1/3 cup batter per pancake, add batter to pan and cook about 1 to 2 minutes per side until golden brown. Serve warm with your favorite topping.
Makes about 8 pancakes.
