Ingredients (view qty in metric system instead)
1 cup plain low-fat yogurt 2 large avocados, halved and pitted 1/4 cup chopped red onion 4 fresh jalapeno peppers, stemmed, seeded and chopped 1 tbsp. + 1 tsp. lemon juice 1/2 tsp. ground cumin 1/2 tsp. salt 1/8 tsp. pepper 1/4 cup chopped fresh cilantro 1 1/2 cups diced tomato
Directions
Put yogurt into a strainer and let drain over a bowl 10 minutes. Place the meat from 1 avocado, onion, jalapenos, lemon juice, cumin, salt, pepper, drained yogurt and cilantro in a food processor and blend until smooth. Scoop out meat from the other avocado and coarsely mash with a fork. Stir into blended avocado mixture along with tomato. Garnish with additional chopped fresh cilantro if desired.
Serves 8 at about 130 calories per serving.
