Ingredients (view qty in metric system instead)
1 pound dried lentils, picked over 4 large tomatoes, chopped 1 large onion, peeled and finely chopped 1/4 cup olive oil 2 cloves garlic, peeled and minced 1 tsp. paprika 1/2 tsp. white pepper 1 tsp. salt 4 cups water 1 cup chopped fresh parsley leaves 1 cup chopped fresh cilantro leaves
Directions
Combine lentils, tomatoes, onion, oil, garlic, paprika, salt, pepper and water in a large saucepan. Heat to a boil, stirring frequently. Reduce heat and simmer about 45 minutes until lentils are tender, adding more water if necessary. Stir in parsley and cilantro and simmer 1 minute.
Serves 4.
