Ingredients (view qty in metric system instead)
1 cup all purpose flour 1 tsp. baking soda 1/2 tsp. salt 1 cup solid vegetable shortening 1 1/2 cups sugar 2 large eggs 1/4 cup fresh lemon juice 2 tsp. lemon extract 1 cup rolled oats 1 cup raisins
Directions
Preheat oven to 350 degrees. Lightly grease 2 sheet pans. Stir together the flour, baking soda and salt in a small bowl. In a large bowl, cream together the shortening and sugar. Beat in the eggs, lemon juice and lemon extract. Gradually mix in the flour mixture. Stir in the oats and raisins. Drop the dough by tablespoonfuls onto the prepared pans, spacing 1 1/2 inches apart. Bake cookies 12 to 15 minutes until lightly browned. Transfer cookies to racks and cool completely. Store in an airtight container at room temperature.
Makes about 4 to 5 dozen cookies.
