Ingredients (view qty in metric system instead)
2/3 plus 1/4 cup sugar 1/4 cup all purpose flour 7 tbsp. fresh lemon juice 1/4 cup warm melted butter 1 tbsp. finely grated lemon peel 3 large egg yolks 1 1/2 cups buttermilk 3 large egg whites
Directions
Preheat oven to 350 degrees. Butter the inside of a 6 to 8 cup glass loaf dish. Stir together 2/3 cup sugar and flour in a large bowl. Mix in lemon juice, melted butter, lemon peel and yolks. Stir in buttermilk. Place egg whites in a medium bowl and beat to soft peaks. Gradually beat in remaining 1/4 cup sugar. Continue beating whites until stiff peaks form. Fold the beaten whites into the buttermilk batter. Pour the batter into the prepared dish. Place the dish in a large baking pan. Add enough hot water to the baking pan to come halfway up the sides of the loaf dish. Bake the cake about 70 minutes until the top is light golden. Remove the dish from the water bath and let cool 15 minutes. Spoon the warm pudding cake into bowls and serve.
Serves 6.
