Ingredients (view qty in metric system instead)
6 whole graham crackers 2 1/2 tbsp. sugar pinch salt 3 tbsp. melted butter 8 ounces softened cream cheese 1 large egg 2 tbsp. milk 2 tsp. finely grated lemon peel 1 tbsp. fresh lemon juice 1/4 cup honey
Directions
Preheat oven to 325 degrees. Combine graham crackers, sugar and salt in a food processor and grind finely. With processor running, add melted butter and blend until mixture is evenly moistened. Press mixture into the bottom of an ungreased 8x8 inch baking pan. Bake crust 10 minutes. Transfer pan to a rack and cool 5 minutes. Meanwhile, beat together cream cheese, egg, milk, lemon peel and lemon juice in a medium bowl. Add honey and blend well. Pour filling over the prepared crust. Bake about 30 minutes until cheesecake is set and slightly puffed. Transfer cheesecake to a rack and cool to room temperature. Cover and refrigerate at least 3 hours until chilled. Cut into squares.
Makes about 2 dozen 1 1/2 inch squares.
