Ingredients (view qty in metric system instead)
1 tbsp. butter 1 tbsp. olive oil 2 boneless skinless chicken breasts 1/2 tsp. salt 1/2 tsp. pepper 1/2 pound thinly sliced mushrooms 1 1/2 tsp. minced garlic 8 paper-thin slices fresh lemon 1/2 cup dry white wine 2 tbsp. fresh lemon juice chopped fresh parsley
Directions
Melt butter with oil in a skillet. Season chicken with salt and pepper. Add to skillet and brown on both sides. Reserve chicken. Add mushrooms and garlic to skillet and cook until tender, about 4 minutes. Return chicken to skillet. Overlap 4 lemon slices on top of each chicken breast. Pour white wine and lemon juice over. Cover and simmer until chicken is cooked through, about 5 minutes. Uncover skiller and simmer until sauce is reduced and thickened, about 5 minutes. Transfer chicken to plates and spoon sauce over. Sprinkle with chopped parsley to garnish.
Serves 2.
