Ingredients (view qty in metric system instead)
Crust: 3/4 cup butter or margarine, softened 1 1/2 cups all purpose flour 1/2 cup powdered sugar
Filling: 8 ounces cream cheese, softened 2/3 cup sugar 2 large eggs 2 tsp. grated lemon peel 1/3 cup fresh lemon juice
Topping: 1 1/2 cups sour cream 1/3 cup sugar 1/2 tsp. vanilla extract fresh blueberries red piping gel
Directions
For crust: Preheat oven to 350 degrees. Line a 13x9 pan with foil. Beat together butter, flour and powdered sugar until it forms a dough. Press into bottom of pan and bake until light golden, 15 to 20 minutes.
For Filling: Beat together cream cheese and sugar until smooth. Beat in eggs, peel and lemon juice until well blended. Pour over crust and spread evenly. Bake 20 minutes or until almost set.
For topping: Mix together sour cream, sugar and extract and spoon over top of filling. Bake 10 minutes. Cool. Refrigerate 4 hours. Lift out of pan using foil if desired. Cut into 24 bars. Decorate as a flag using blueberries placed in upper left 1/4 as stars and using the piping gel to draw horizontal stripes.
Makes 24 bars.
