Ingredients (view qty in metric system instead)
Lamb: 8 lamb rib or loin chops, about 1 inch thick 4 slices swiss cheese, halved 4 thin slices onion, halved
Minted Fruits: 1/3 cup mint-flavored apple jelly 1 tbsp. butter or margarine 1 tbsp. lemon juice 16 ounce can pear halves, drained and quartered 13 1/2 ounce can pineapple chunks, drained
Directions
For Lamb: Preheat oven on broil or 550 degrees. Broil chops 3 inches from heat, about 7 minutes until browned. Turn chops and broil 5 to 7 minutes. Place onion slice half and swiss cheese half over each chop. Broil 2 minutes until cheese begins to melt. Serve with minted fruits.
For Minted Fruits: Combine jelly, butter or margarine and lemon juice in a small saucepan. Cook, stirring, until jelly is melted. Stir in pears and pineapple and heat through.
Serves 4.
