Ingredients (view qty in metric system instead)
1 cup water 1 cup plus 2 tbsp. sugar 1 1/2 cups self-rising cake flour 1/3 cup milk 1/4 cup cold butter, diced 1/2 tsp. ground cinnamon 3 cups fresh or frozen thawed blackberries 1/4 cup melted butter
Directions
Preheat oven to 350 degrees. Combine water and 1 cup sugar in a small saucepan. Heat to a boil. Stir until sugar is dissolved. Remove from heat. Pulse together flour and diced butter in a food processor until crumbs form. Add milk and blend just until dough forms. Turn dough out onto a floured surface and roll into an 11x9 inch rectangle. Sprinkle dough with cinnamon and sprinkle blackberries evenly over. Roll dough up jellyroll style, starting from long edge. Cut into 1 1/2 inch thick slices(slices will fall apart). Melt 1/4 cup butter in a 10 inch baking dish. Place dough slices over bottom of pan. Pour sugar syrup over cake slices. Bake cobbler 45 minutes. Sprinkle remaining 2 tbsp. sugar over top of cobbler and bake an additional 15 minutes until golden. Serve warm with ice cream.
Serves 6 to 8.
