Ingredients (view qty in metric system instead)
2 tbsp. butter 1 large onion, peeled and chopped 2 cloves garlic, minced 3 cups diced cooked turkey 3 cups crumbled prepared stuffing or diced boiled potatoes 1 cup prepared gravy 3/4 cup cooked corn 2 tbsp. minced fresh parsley 1/2 tsp. salt 1/4 tsp. pepper 3 large eggs, beaten to blend 3/4 cup grated parmesan cheese 4 tbsp. dry breadcrumbs
Directions
Melt the butter in a large skillet. Add onion and garlic and cook until onion is softened, about 5 to 8 minutes, stirring frequently. Add the turkey and stuffing or potatoes and stir to blend. Add the gravy, corn, parsley, salt and pepper. Stir together the eggs and cheese in a small bowl. Preheat the broiler. Transfer the turkey mixture to a buttered 2 quart casserole dish. Add the egg mixture and stir to combine. Sprinkle the breadcrumbs over the top of casserole. Broil until breadcrumbs start to brown, about 7 minutes. Serve immediately.
Serves 6 to 8.
