Ingredients (view qty in metric system instead)
12 ounce bag pita or tortilla chips 1/2 cup diced red bell pepper 1/2 cup diced yellow bell pepper 1/2 cup matchsticked carrots 14 ounce can chick peas, drained and rinsed 1/2 envelope dry ranch dressing mix 2 cups shredded Cheddar cheese. sour cream sliced black olives
Directions
Pile pita or tortilla chips in a shallow bowl. Stir together diced red and yellow peppers, carrots and chick peas in a small bowl. Spoon the chick pea mixture over the chips. Combine ranch dressing mix and Cheddar in a small bowl. Microwave 45 seconds on High. Stir the cheese and microwave an additional 45 seconds until melted. Pour the melted cheese mixture over the chips. Garnish nachos with sour cream and black olives and serve immediately.
Serves 4.
