Ingredients (view qty in metric system instead)
Cookies: 2 cups all purpose flour 1/4 tsp. baking soda 1/4 tsp. salt 2/3 cup butter, softened 2/3 cup sugar 1 large egg 1 tsp. vanilla extract
Frosting: 8 ounce package cream cheese, softened 3 cups powdered sugar 1 tsp. vanilla extract
Monster Decoration: jelly beans gumdrops chocolate chips tinted coconut other candies for decoration
Directions
For Cookies: Stir together the flour, baking soda and salt in a medium bowl. Cream together butter and sugar in a large bowl until light and fluffy. Beat in the eggs and vanilla. Add the flour mixture and beat until combined. Gather the dough into a ball, then flatten to a disc. Wrap dough tightly with plastic wrap and refrigerate 2 hours.
Preheat oven to 350 degrees. Divide dough in half. Roll one half out to 1/4 inch thick on a floured surface. Cut out cookies with a 3 or 4 inch round cookie cutter. Transfer cookies to a large ungreased sheet pan. Gather up scraps, roll and cut additional cookies. Repeat rolling and cutting with remaining dough. Bake cookies about 12 to 14 minutes until set and golden brown on the edges. Cool cookies 1 minute on pan. Transfer cookies to racks and cool completely.
For Frosting: Beat together cream cheese, powdered sugar and vanilla in a large bowl until light and fluffy. Frost the cooled cookies.
For Decoration: Place jelly beans, gumdrops, chocolate chips, coconut, etc. in separate bowls. Use the decoration ingredients to create your own monster on the frosted cookies.
Makes about 1 dozen cookies.
