Ingredients (view qty in metric system instead)
Crust: 1 1/4 cups graham cracker crumbs 6 tbsp. melted butter 1 tbsp. sugar 1 tsp. ground cinnamon
Filling: 8 ounces cream cheese, softened 14 ounce can sweetened condensed milk 1/2 cup fresh or bottled key lime juice 1 tsp. vanilla extract
Topping: 1 cup cold heavy or whipping cream 1 tbsp. sugar 1 tsp. vanilla extract
Directions
For Crust: Preheat oven to 350 degrees. Stir together graham crumbs, melted butter, sugar and cinnamon in a medium bowl until evenly moistened. Press evenly into bottom and up sides of a 9 inch pie pan. Bake crust about 10 minutes until set and golden. Transfer crust to a rack and cool.
For Filling: Beat together cream cheese, condensed milk, lime juice and vanilla in a large bowl until smooth. Pour filling into cooled crust. Cover and refrigerate overnight.
For Topping: Combine cream, sugar and vanilla in a large bowl. Beat to soft peaks and spread evenly over top of cheesecake. Cover and refrigerate 1 hour before serving.
Serves 8 to 10.
