28 skinless chicken wings 1/2 cup chicken broth 2 tbsp. canned minced jalapeno chili 2 tsp. sugar 1 tsp. onion powder 1 tsp. pepper 1 tsp. ground allspice 1/2 tsp. dried thyme 1/4 tsp. ground nutmeg 1/4 tsp. ground cinnamon 1/4 tsp. crushed red pepper flakes 1 tsp. soy sauce 1 tsp. cider vinegar 1 tsp. vegetable oil
Directions
Cut off and discard chicken wing tips. Cut wings in half at the joint. Stir together chicken broth, jalapeno, sugar, onion powder, pepper, allspice, thyme, nutmeg, cinnamon, crushed red pepper, soy sauce and cider vinegar in a shallow baking dish. Add chicken wings and toss to coat. Cover and refrigerate at least 8 hours.
Preheat oven to 450 degrees. Coat the rack of a broiler pan with cooking spray. Remove chicken wings from marinade and place on prepared rack. Bake wings 20 minutes. Turn chicken over and bake an additional 15 to 20 minutes until chicken is cooked through.
Makes 56 wings.
