8 ounces cod fillets 2 medium onions, peeled and chopped 2 tbsp. plus 1 tsp. olive oil 1 cup all purpose flour 3/4 cup milk 1 large egg 1 tsp. baking powder 1 tsp. salt 1/4 tsp. crushed red pepper flakes oil for frying
Directions
Place cod fillets in a medium saucepan with water to cover. Cover and heat to a simmer. Simmer cod 5 to 7 minutes until fish flakes easily. Drain cod and reserve. Heat 2 tbsp. olive oil in a large skillet over medium heat. Add onions and cook until tender, stirring frequently. Mix together remaining 1 tsp. olive oil, flour, milk, egg, baking powder and crushed red pepper flakes in a large bowl. Stir in cod and onions. Heat 1 1/2 inches of oil to 360 degrees in a deep fryer or skillet. Working in batches, drop fritter batter by tablespoonfuls into hot oil. Fry fritters about 4 minutes, turning once, until golden brown. Drain fritters on paper towels. Serve hot.
Makes about 2 to 3 dozen fritters.
