Ingredients (view qty in metric system instead)
Filling: 2 pounds ground beef 1 1/2 cups chopped onion 1 package dry taco seasoning 3/4 cup water shredded lettuce 2 cups + 1 cup finely shredded cheddar cheese
Sauce: 1 can prepared chili without beans 1 cup water 1 tsp. cayenne pepper 1 tsp. crushed red pepper flakes 10 flour tortillas, about 8 inches in diameter
Directions
For Filling: Brown beef with onion in a large skillet. Drain fat. Stir in taco seasoning mix and 3/4 cup water. Simmer until most of liquid is evaporated.
For Sauce: Combine chili, cayenne and pepper flakes in a medium saucepan. Add 1 cup water. Add 1 cup beef mixture and heat through.
Preheat oven to 500 degrees. Fill each tortilla with 3 heaping tablespoons meat mixture, lettucer and 3 tbsp. cheese. Roll filled tortillas and place in a large baking dish. Spoon sauce mixture and 1 cup cheese over. Bake until cheese is melted and bubbly, about 5 minutes.
Serves 8 to 10.
