Ingredients (view qty in metric system instead)
2 large eggs 1 cup milk 1/2 cup canned pumpkin puree 1 3/4 cups sourdough baking mix 2 tbsp. sugar 1/2 tsp. ground cinnamon 1/2 tsp. ground nutmeg 1/2 tsp. ground ginger 1/4 cup vegetable oil fresh strawberries, rinsed and stemmed
Directions
Beat eggs on high speed in a medium bowl about 5 minutes until thick and lemon colored. Stir in milk, pumpkin, baking mix, sugar, cinnamon, nutmeg, ginger and oil. Preheat an ungreased griddle over medium heat. Drop the batter by 1/4 cupfuls onto the skillet and cook until puffed and bubbles are breaking. Slice strawberries vertically. Press strawberry slices into the uncooked side of the pancake to form a pumpkin face. Flip pancakes over and cook the other side until golden brown. Serve the pancakes face side up.
Makes about 1 dozen pancakes.
