Ingredients (view qty in metric system instead)
1 1/2 pounds Italian sausage links 1 cup chopped onion 3 stalks celery, chopped 1 large red bell pepper, stemmed, seeded and chopped 1 large green bell pepper, stemmed, seeded and chopped 1 large yellow bell pepper, stemmed, seeded and chopped 1 tbsp. minced garlic 3 tbsp. olive oil three 14.5 ounce cans Italian style stewed tomatoes 16 ounce can red kidney beans, rinsed and drained 15 ounce can butter beans, rinsed and drained 6 ounce can tomato paste 1 tbsp. chili powder 1 tsp. salt 1 tsp. pepper
Directions
Place sausage links in a large saucepan with water to cover. Bring to a boil. Reduce heat and simmer sausage until cooked through. Drain sausage and refrigerate until cooled completely. Slice sausage links into rounds. Combine the onion, celery, bell peppers, garlic and oil in a large pot. Cook over medium heat about 8 minutes until vegetables are tender, stirring frequently. Add sliced sausage, stewed tomatoes, kidney beans, butter beans, tomato paste, chili powder, salt and pepper. Bring to a boil, stirring frequently. Reduce heat to medium low, cover and simmer about 30 to 45 minutes until chili is slightly thickened. Serve hot.
Serves 6 to 8.
