Ingredients (view qty in metric system instead)
2 1/2 to 3 pounds unpeeled russet potatoes, cut into wedges 1/2 cup olive oil 1 tsp. paprika 1/4 cup grated Parmesan cheese, divided 1/2 tsp. salt 2 tbsp. minced fresh chives
Directions
Preheat oven to 375 degrees. Line a sheet pan with foil. Spray foil lightly with cooking spray. Toss together potato wedges, olive oil, paprika, half the Parmesan cheese and salt in a large bowl until potatoes are well coated. Roast potatoes 20 to 30 minutes until crisp and cooked through, turning occasionally. Remove potatoes from oven and sprinkle with remaining Parmesan cheese and chives. Serve immediately.
Serves 6 to 8.
