1 large egg, beaten to blend 2 tbsp. ketchup 3/4 cup soft fresh breadcrumbs 2 tbsp. grated Parmesan cheese 2 tbsp. chopped onion 1 tbsp. coarse grain Dijon mustard 3/4 tsp. dried Italian seasoning 1 clove garlic, peeled and minced 1/4 tsp. salt 1/4 tsp. pepper 1 pound ground beef 4 thin slices Mozzarella cheese 4 tbsp. prepared basil pesto 4 hamburger buns, split and toasted
Directions
Preheat broiler. Stir together egg and ketchup to blend in a large bowl. Stir in bread crumbs, Parmesan, onion, Dijon, Italian seasoning, garlic, salt and pepper. Add ground beef and mix well. Form the ground beef mixture into four 3/4 inch thick patties. Place the beef patties on a rack set in a broiler pan. Broil burgers 3 to 4 inches from the heat, about 8 minutes per side until cooked through. Top each burger with 1 slice Mozzarella and broil 1 minute until cheese is melted. Transfer the cheeseburgers to the bottom bun halves. Spoon 1 tbsp. pesto onto each cheeseburger. Top with the remaining bun halves and serve.
