Ingredients (view qty in metric system instead)
1 large egg, beaten to blend four 4 ounce catfish fillets 1/2 cup Italian seasoned bread crumbs 2 tbsp. vegetable oil, divided 4 small hoagie rolls, split 1/4 cup prepared pesto sauce, divided 1 jar roasted red pepper halves 8 lettuce leaves 4 thin slices Provolone cheese
Directions
Place beaten egg in a pie plate. Place bead crumbs in another pie plate. Coat each catfish Fillet in egg then dredge in bread crumbs. Place breaded catfish fillets on a sheet of wax paper. Heat 1 tbsp. oil in a large skillet over medium-high heat. Add 2 catfish fillets and cook 3 to 4 minutes per side until golden and cooked through. Drain catfish fillets on paper towels. Add remaining 1 tbsp. oil to skillet. Add remaining catfish fillets and cook. Spread cut sides of rolls with pesto. Lay roasted red peppers, lettuce and Provolone cheese over bottom roll. Top each roll with a catfish fillet. Place tops of rolls over catfish.
Makes 4 sandwiches.
