1 1/2 pounds ground beef 15 ounce can tomato sauce with cheese, divided 1 tbsp. dried oregano 1/2 cup chopped onion 1 large egg 1 tsp. salt 3/4 cup cracker crumbs 2 cups shredded Mozzarella cheese
Directions
Preheat oven to 350 degrees. Lightly coat the inside of a medium baking dish with cooking spray. Stir together ground beef, 3/4 of the tomato sauce, oregano, onion, egg, salt and cracker crumbs in a large bowl until well combined. Pat the beef mixture out to a 10x12 inch rectangle on a sheet of wax paper. Sprinkle the mozzarella evenly over the meat, leaving a 1 inch margin all around. Roll up the meatloaf jellyroll style. Transfer the meatloaf to the prepared dish. Bake meatloaf 75 minutes. Pour off the grease from the dish. Spoon the remaining tomato sauce over the top of the meatloaf. Bake meatloaf an additional 3 to 5 minutes. Let meatloaf stand a few minutes before slicing and serving.
