Ingredients (view qty in metric system instead)
3 Tbsp. olive oil 1 Tsp. minced garlic 4 boneless, skinless chicken breasts cut into 1 inch squares 1 cup frozen italian green beans, thawed 1/2 cup chopped red bell pepper 1/4 cup chopped green onion, white part only 1/2 Tsp. salt 4 medium tomatoes, quartered 4 anchovies, mashed to paste (optional) 2 Tbsp. diced pimiento 1 Tbsp. capers, rinsed and drained (substitute chopped black olives if desired) 1 to 2 Tbsp. fresh lemon juice 1/2 tsp. red pepper flakes
Directions
Heat wok or large skillet over high heat. Add oil and garlic and stir-fry 10 seconds. Add chicken, beans, chopped red pepper, onion and salt. Cook, stirring, until chicken is cooked through, about 3 minutes. Add tomato, anchovies, pimiento and capers and stir-fry 1 minute. Add lemon juice and pepper flakes and toss to mix. Serve over cooked rice or pasta.
Serves 4.
