Ingredients (view qty in metric system instead)
2 large onions, peeled and cut into 8 wedges 2 medium cloves garlic, peeled 3 to 3 1/2 pounds beef chuck roast 1 envelope dry Italian dressing mix 2 large red bell peppers, stemmed, seeded and chopped 1/2 cup beef broth 1 tsp. salt 1 tsp. pepper
Directions
Place onion wedges and garlic cloves in a crockpot. Rub chuck roast all over with the Italian dressing mix. Place roast on top of onions in the crockpot. Add bell peppers, broth, salt and pepper. Cover crockpot and cook roast on Low for 8 hours or High for 5 hours. Transfer roast and vegetables to a platter and let stand 5 minutes. Strain cooking liquid into a large saucepan and skim fat. Heat to a boil. Slice roast across the grain and serve with vegetables and heated broth.
Serves 6 to 8.
