Ingredients (view qty in metric system instead)
2 red bell peppers, stemmed, seeded and thinly sliced 2 green bell peppers, stemmed, seeded and thinly sliced 2 medium onions, peeled and thinly sliced 4 large cloves garlic, peeled and chopped 2 tsp. dried oregano 1/4 tsp. crushed red pepper flakes 1/2 tsp. salt 1/2 tsp. pepper 2 tbsp. olive oil 2 pounds sweet Italian sausage links
Directions
Preheat oven to 350 degrees. Combine red and green peppers, onion, garlic, oregano, red pepper flakes, salt and pepper in a 13x9 inch baking dish. Drizzle with olive oil and toss to coat. Place sausages in a large skillet over medium high heat and brown on all sides. Place the sausages on top of the pepper mixture. Bake about 45 minutes until the sausages are cooked through and vegetables are tender, stirring occasionally.
Serves 6.
