Ingredients   (view qty in metric system instead)
2 slices herbed bread or foccaccia, buttered on each side
2 tbsp. prepared basil pesto
1/4 tsp. pepper
4ounce boneless skinless chicken breast, flattened slightly
2 slices red onion, 1/4 inch thick
1 slice provolone cheese


Directions
Coat chicken breast all over with pesto. Sprinkle with pepper. Cover and refrigerate 30 minutes. Preheat skillet and coat with nonstick spray. Add chicken and cook, covered, over medium heat, turning frequently. When chicken is done remove and add red onion. Cook until tender. Wipe skillet clean and add bread. Toast lightly on both sides. Later sandwich with chicken, onion and cheese. Return to skillet and place a piece of wax paper or buttered foil over sandwich. Place brick or heavy cast iron skillet over to press. Cook 1 minute. Turn sandwich, repeat weight process and cook 1 minute until well toasted.

Makes 1 sandwich.
