Ingredients (view qty in metric system instead)
Pork: 2 tsp. salt 1/2 tsp. pepper 1 tsp. ground cumin 1 tsp. chili powder 1 tsp. ground cinnamon 2 pork tenderloins, about 1 1/4 pounds each 2 tbsp. olive oil
Glaze: 1 cup dark brown sugar 2 tbsp. minced garlic 1 tbsp. tabasco sauce
Directions
For Pork: Preheat oven to 350 degrees. Stir together salt, pepper, cumin, chili powder and cinnamon in a small bowl. Coat pork with spice mixture. Heat oil in a large skillet over medium-high heat. Add pork tenderloins and brown on all sides. Transfer pork to a roasting pan. Pat glaze onto the top of each tenderloin. Roast pork about 20 minutes until temperature reaches 150 degrees. Let pork stand 10 minutes before slicing.
For Glaze: Stir together brown sugar, garlic and tabasco in a small bowl.
Serves 6 to 8.
