Ingredients (view qty in metric system instead)
1 cup chopped onion 2 cloves garlic, minced 1 tbsp. olive oil 1 cup soft breadcrumbs 3/4 cup milk 2 large eggs, beaten to blend 3 tbsp. finely chopped fresh parsley 1 1/2 tbsp. worcestershire sauce 1/2 tsp. tabasco sauce 1 1/2 tsp. salt 1/2 tsp. pepper 1 1/2 pounds ground chuck 1/4 cup ketchup 2 tbsp. white vinegar 4 slices bacon, cooked until crisp, drained
Directions
Preheat oven to 400 degrees. Line a shallow baking pan with foil. Heat oil in a large skillet. Add onion and garlic and cook until softened, stirring frequently, about 4 minutes. Stir together bread crumbs, milk, eggs, parsley, worcestershire, tabasco, salt and pepper in a large bowl. Add beef and knead by hand until well blended. Drop cupfuls of meat mixture into prepared pan and form into 4 domes. Stir together ketchup and vinegar and spoon over mounds. Bake about 25 minutes until centers reach 155 degrees. Preheat broiler. Broil meatloaves 1 to 2 minutes, 2 to 3 inches from heat until glazed. Top each meatloaf with a strip of bacon and serve.
Serves 4.
