Ingredients (view qty in metric system instead)
8 ounces chopped bittersweet chocolate 1/2 cup butter diced 4 large eggs, whites and yolks separated 3/4 cup plus 2 tbsp. sugar 1 tsp. powdered sugar
Directions
Butter and flour the inside of six 1 cup ramekins. Set ramekins on a sheet pan. Combine the chocolate and butter in the top of a double boiler over simmering water. Stir occasionally until melted and smooth. Remove chocolate from over water and let stand 5 minutes. Meanwhile, beat the egg yolks in a large bowl until blended. Stir in the melted chocolate mixture. Beat the egg whites in a separate bowl to soft peaks. Add the sugar and beat until stiff peaks form. Fold the whites completely into the chocolate mixture. Cover and refrigerate 4 hours.
Preheat oven to 375 degrees. Spoon batter into the prepared ramekins. Bake 18 to 20 minutes until tops are firm and a knife inserted near edge comes out clean. Serve cakes immediately.
Makes 6 individual cakes.
