Ingredients (view qty in metric system instead)
Pastry: 2 sheets frozen, thawed puff pastry 1 large egg yolk 1 tbsp. water
Filling: 1/3 cup water 3 tbsp. fresh lemon juice 3 1/2 tbsp. cornstarch 5 cups fresh blackberries 5 cups fresh raspberries 2 1/4 cups sugar
Directions
For Pastry: Preheat oven to 400 degrees. Place puff pastry sheets on a flat surface. Cut out eight 4 inch diameter circles with a floured round cookie cutter. Transfer circles to a baking sheet. Freeze pastry 5 minutes. Stir together yolk and water in a small bowl. Remove pastry rounds from freezer and brush tops with yolk mixture. Bake pastry 8 to 10 minutes until puffed and golden brown. Transfer baked pastry to a rack and cool completely.
For Filling: Preheat oven to 350 degrees. Whisk together water, lemon juice and cornstarch in a large bowl. Add berries and sugar. Toss gently to combine. Divide filling between eight 1 1/2 cup ceramic ramekins. Place filled ramekins on a sheet pan. Bake cobblers 25 minutes until filling is heated through and bubbly. Cool cobblers slightly. Place cobblers on plates and top with pastry rounds. Serve immediately.
Makes 8 individual cobblers.
