Ingredients (view qty in metric system instead)
2 small onions, peeled and minced 3 tbsp. vegetable oil 2 tsp. sweet Hungarian paprika 2 tbsp. minced fresh parsley 1 pound sliced mushrooms 4 cups chicken broth 1 tsp. all purpose flour 2 tbsp. sour cream 1/4 cup heavy or whipping cream 1/4 tsp. salt 1/4 tsp. pepper
Directions
Heat oil in a large saucepan over medium-low heat. Add onions and cook until tender, stirring frequently, about 8 minutes. Stir in paprika, parsley and mushrooms. Cover and simmer 3 minutes. Uncover, add broth and bring to a boil. Boil 10 minutes. Stir together the flour and sour cream in a small bowl until smooth. Gradually whisk in cream. Whisk in 1/2 cup of the soup. Return mixture to remaining soup in pan and bring to a boil. Season with salt and pepper. Reduce heat and simmer soup 5 minutes.
Makes about 8 cups soup.
